This month, our Regional Food Innovation Centre is serving up a flavour-packed, comfort snack that’s fun, chewy, and full of modern appeal: Korean Mochi Corndog with Eggless Creamy Gochujang Sauce. This prototype blends indulgence with innovation — using specialty starches and clean label ingredients to enhance functionality without sacrificing taste.

N-DULGE® 321 (Ingredion)
- Provides the chewiness and stretchiness to mochi dough
- Stable under low temperature storage condition
PRECISA® Cream 7310 (Ingredion)
- Provides instant thickening to the mochi dough
- Support the ready-to-use function of mochi dough premixed
Eggless Creamy Gochujang Sauce
FIBERTEX® CF500 (Ingredion)
- Clean lable emulsifier upcylcled ingredient
- Able to emulsify oil up to 20% to 30 % per 1-2 % of FIBERTEX® CF500
- Provides viscosity to the sauce
DOLCERRA® 5251 (Ingredion)
- Flavour modifying properties allows boosting of salty & savoury perception
- Mild sweetness also supports in improving sweetness quality and allows for sugar reduction
